Baker – (primarily Focaccia & Bread, but also cookies)
Ideal for a recent graduate of a Baking program, or a baker with a minimum of 6 months industry experience.
– Working alongside the owner (as well as independently), the successful candidate will help prepare authentic Italian focaccia (plus bread & enriched sweet dough) from scratch, as well as simple home-style cookies and mini cakes.
– Execute each of the 7 steps in the focaccia making process. 1. Portion & tray retarded dough; 2. proof/stretch/form; 3. dimple/season/final proof; 4. parbake; 5. cool product; tray for cold storage; 6. package; 7. Retherm (final bake) as needed.
– Prepare, sheet, shape, simple short crust cookie doughs, according to proprietary recipes, and store them in a RTB format for later baking.
-Bake off cookies, small cakes, as needed for the sales display case.
– Prepare Sicilian style cannoli filling, and fill pre-baked shells as needed.
– Follow recipes and measurements accurately to ensure consistent quality
– Operate and maintain baking equipment.
– Monitor oven temperatures and adjust as needed for optimal baking results.
– Ensure compliance with food safety and sanitation regulations.
– Work with other bakery staff to coordinate baking schedules.
Compensation $18-20., plus staff discount and shift snack/beverage.
